The Fondillón 50 Years is a monumental expression of craftsmanship, tradition, and time. Made from meticulously selected Monastrell grapes, grown on century-old vines, this wine encapsulates the essence of Alicante’s winemaking legacy. Tasting Notes
On the nose, this wine unveils a powerful and classical aromatic profile, where exuberant notes of aged Monastrell intertwine with the influence of century-old American oak barrels and wild ancient oak. Layers of antique furniture, aged varnishes, and a touch of marine iodine create an aromatic kaleidoscope. Subtle hints of honey, smoky nuances, and salinity lead back to evocative notes of sacristy woods, toffee, coffee, tobacco, carob, fig bread, and toasted almonds.

On the palate, the Fondillón reveals itself as moderately sweet, with a delicate interplay of acidity and a slight spiciness on the entry. Its journey through the mouth is calm yet persistent, showcasing flavors of caramel, spices, and echoes of dried fruits and raisins, balanced by a dry finish that lingers eternally. The concentration is intense, with perfectly integrated alcohol, delivering an elegant, complex, and unforgettable finish.

Terroir and Vineyard
Grape Variety: Monastrell, cultivated as bush vines, facing south to capture the Mediterranean sun.
Soil: Limestone-rich, white, and scattered with small, coarse stones.
Altitude: 600 meters above sea level.
Vine Age: 50 years.
Yield: Approximately 1 kg per vine, ensuring exceptional concentration and quality.
Winemaking Process
The process begins with a meticulous manual selection of overripe Monastrell grapes. After destemming, fermentation lasts three weeks, with frequent pump-overs to extract the full potential of the fruit. The wine completes fermentation at 16-18% alcohol and retains 30 grams of residual sugar, achieving a remarkable balance.

The wine is then transferred to 1,730-liter old American oak barrels, where it ages gracefully for 50 years. During this time, the arid climate causes evaporation, leading to a natural increase in alcohol to 22.5%, without any fortification or blending. This extraordinary journey creates a wine of profound depth and complexity.
